01 - In a shallow bowl, combine granulated sugar and cinnamon until evenly mixed. Set aside for coating.
02 - In a saucepan over medium heat, bring water, unsalted butter, granulated sugar, and salt to a gentle boil. Add flour all at once and stir vigorously until a smooth dough forms and pulls away from sides, about 2 minutes. Remove from heat.
03 - Let dough cool for 5 minutes, then transfer to a piping bag fitted with a star tip.
04 - In a large heavy-bottomed pot, heat vegetable oil to 375°F (190°C).
05 - Pipe 1-inch pieces of dough directly into hot oil, cutting with scissors. Fry in batches, turning occasionally until golden brown and crisp, about 2–3 minutes per batch.
06 - Remove fried churro bites with a slotted spoon and drain briefly on paper towels. Immediately toss in cinnamon sugar coating for even coverage while still warm.
07 - Transfer churro bites to a serving plate and enjoy warm.
