# Method:
01 - Combine shredded chicken, BBQ sauce, honey, hot sauce, salt, and pepper in a medium bowl. Mix thoroughly to coat chicken evenly and set aside.
02 - Heat olive oil in a skillet over medium heat. Add sliced red onions and chopped bell peppers. Sauté for approximately 5 minutes until softened and lightly browned. Remove from heat.
03 - Place a tortilla on a clean surface. Sprinkle half with cheddar and mozzarella cheeses. Layer BBQ chicken mixture, sautéed vegetables, and fresh cilantro on top of cheese.
04 - Fold the tortilla over to create a half-moon shape, pressing gently to enclose the filling securely.
05 - Heat a clean skillet or griddle over medium heat. Cook filled tortilla for approximately 3 minutes per side until golden and crispy with melted cheese.
06 - Remove from skillet and let cool for 1-2 minutes. Cut into wedges. Repeat with remaining tortillas and filling. Serve warm with sour cream, guacamole, and lime wedges if desired.
